CHIPOTLE ROASTED VEGETABLES

½ lb Button Mushrooms (halved)
½ lb Red Bell Peppers (roughly chopped)
1 lb Zucchini (coined 1/4 inch)
1 lb Yellow Squash (coined 1/4 inch)
½ lb Carrots (roughly chopped)
½ lb Red Onion (julienne)
2 cups Russian River Fine Foods Chipotle Grilling Sauce
Preheat oven to 350 degrees.
Toss all vegetables together and set aside until you are ready to use them. Take the vegetables and toss them with 2 cups of Chipotle Grilling Sauce.
Transfer vegetables to a sheet pan and roast in oven until fully cooked for approximately 30 minutes.
